The Victoria Room mixologists use the bar as a stage for some cocktail voodoo! Watch them work the Sugar Cane Press to extract the sweet juice of freshly-cut sugar canes. This luscious syrup, called guarapo in Cuba, is used as the base of each of the new cocktails on their menu.
Mixed with traditional rums, gins and vodkas, spiced by mints and zest, and accompanied by lime and other citrus juices, the freshly squeezed sugar cane combines with these vibrant, piquant ingredients into deliciously exotic cocktails.
